Microbiota analysis of 14 cheese samples imported to South Korea

Abstract

|
The objective of this study was to investigate the metagenomic properties of cheese samples imported to South Korea. Metagenomic analysis based on the 16S rRNA sequencing showed that the microbiota of cheese with a starter significantly differs from those without a starter. Lactococcus and Streptococcus were dominant compared to Lactobacillus in cheeses made using commercial starters. The microbiota of cheeses without commercial starters was more diversified than that of cheese with a starter. Various microorganisms were detected in the cheese samples, including thermophilic (Geobacillus and Anoxybacillus) and cold-resistant microorganisms (Pseudomonas and Acinetobacter) affecting the quality and safety of cheese samples. These results provide a microbial profile of cheese imported to South Korea.
